Banana Bread

Banana Nut Squares/Bread

Ingredients:
2 1/2 Cup Flour
1 1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
3/4 Cup Salted Butter Softened
1 Cup Salted Butter Melted
1 1/2 Cups Brown Sugar Packed
2 Eggs
3 Cups Ripe Bananas (About 7) Mashed
1 Teaspoon Vanilla
2 Teaspoons Ground Cinnamon
1 Cup Chopped Walnuts (Optional)
Directions:
Preheat oven to 325 F. Spray one 16 inch baking dish or two 9x5 inch loaf pans with cooking spray (used to hold parchment paper in place) and line with parchment paper for easy removal.

In a medium bowl combine flour, baking soda, salt & cinnamon. In a separate large bowl w/ an electronic mixer, cream together softened butter & sugar. Add eggs, bananas and vanilla. Slowly add four mixture and chopped nuts. Pour batter into pan(s) and bake on center rake for 45-60 minutes in 16 inch pan or 60-90 minutes in loaf pans. A tooth pick inserted in center should come out clean and the bread will pull away from sides.

Cool to room temperature. Remove bread from pan, slice or cut into squares and pour on melted butter.
